
Chef’s Corner: Umami Ramen & Dumpling Bar
Say the word “ramen” and you’re likely to conjure a flashback of the instant noodle bricks of your college years. But thanks to New Yorkers-turned-Madisonians Michael Ding and Randy Ng, a fresh take on ramen noodles—along with Asian-style dumplings and tasty buns—is now the centerpiece of a new local eatery: Umami Ramen & Dumpling Bar.
In a revamped location on Willy Street the duo stays true to Japanese traditions with a menu full of age-old recipes.
“Preserving the flavor of Japanese food needs thoughtful cooking and a respectful attitude toward food,” Ding says.
By taking 14 hours to prepare their broths and using fresh ingredients, the chefs of Umami deliver the taste of Japan in meals such as the popular pork buns. From dishes featuring mounds of fresh veggies atop delectable noodles to their irresistible dumplings, they’re showing Madison what grownup ramen is all about.
