Chef’s Corner: Bison Jack's

By Jenny Bauer

The rolling prairies famous for buffalo may lie to our west, but here in farm country, we know how to enjoy our meats. If it’s a good brat you seek, a new eatery may be for you. Bison Jack’s aims to not only make bison synonymous with juicy brats and burgers, but eco-friendly food choices, too.

Serving bison is a trend in the restaurant world and one Director of Operations Shawn Horne believes Madisonians will embrace. “Madison is an educated city and [one of] the top consumers of sausages and brats … so it’s a great place for this concept,” he explains.

Gluten-free and leaner than many meats (bison is even less fatty per serving than chicken), Horne says Bison Jack’s uses sustainable ranching practices. Throw fresh veggie add-ons and buns baked in-house into the mix and you’ve got a restaurant designed for a Madison state of mind.

Bison Jack’s is located in Greenway Station at 8310 Greenway Blvd., Middleton; bisonjacks.com.
