Hear the words “American cuisine” and you’ll likely think of the usual classics—say burgers and fries—before an artful bistro dish. But at 43 North, a sleek eatery where the emphasis falls more on creative cuisine, a contemporary approach to American favorites is de rigueur.
Owned by Shinji Muramoto of Restaurant Muramoto fame and named after the latitude which houses both 43 North and his hometown of Sapporo, Japan, unique but approachable dishes, such as salmon with a plum gastrique or the game hen and mustard caramel sauce pictured here, showcase how Executive Chef Nicholas Johnson thinks modern American cuisine should be defined.
Take in a weekday dinner or stop in for the popular three-course meals, either way you’ll find the modern bistro mixes fresh, locally found produce with a healthy dash of imagination for a dining experience your taste buds won’t forget.
