Chef’s Corner: Eldorado Grill

The Eldorado Grill’s adventurous brunch menu began with a journey to create the perfect biscuit and gravy.
“I couldn’t find [a biscuit and gravy] anywhere that was good to me,” says chef and proprietor Kevin Tubb. “So I was like, ‘That’s it, I’m just going to make them!’”
After perfecting Eldorado’s flaky biscuit and gravy, Tubb reinvented the rest of the Southwest-themed brunch menu, adding innovative twists to everyday breakfasts—including bacon and blueberries baked right into a stack of fluffy pancakes or perfectly poached eggs and corn cakes topped with bacon and a scallion-lime sauce.
“We wanted to be…just a little bit off the beaten path,” Tubb says.
Adding the unexpected to familiar favorites, Tubb has succeeded, delivering savory flavors of the Southwest to Madison’s near east side with a tasteful aplomb.
